
So, it's just about time for your next installment of the high protein vegetarian experiment.....are you ready for this one? (you're not, trust me.....I'm not sure I was!). This week though, there was no fire, no burning and the food was edible. Got to be bonuses. Although the last experiment....not sure that was *totally* edible.....
So, this packs a 372 kcal punch and a beautiful round of macros: 19g carbs, 17g fat and 33g protein (oh yeah!).
To lower the calories and fat take the cheese out. You can substitute with packaged cheese sauce if you're of the packet sauce disposition, makes it taste fine.
So, here goes - you will need:
2 whole eggs
3 egg whites
20g cheese (I like a nice cheddar!) or a packet of cheese sauce
100g cooked quinoa
So, easy peasy:
1. Boil quinoa for 10 mins or so
2. Pop eggs into cup or bowl, whisk, put into microwave for 3-4 mins
3. If you're using a packet of sauce, add sauce to pan with quinoa in. If not, drain quinoa and put in bowl. Add cheese.
4. Take eggs from m-wave and put on top of quiona and cheese - pop this back into the m-wave for 30s or so to melt the cheese
Do NOT add the eggs which aren't properly cooked into the boiling quiona. Nope, that is officially a BAD idea. I can attest to this.....and this is what it looks like...
