I almost decided to skip blogging and go straight to bed, but I'm so pleased with how this weeks experiment came out I have to share it :D

It's true. I'm pretty sure my cat can cook better than I can. Granted he'd probably end up cooking himself, but hey.
Yesterday was a long, busy day. It was my part-time day, which only ever seems to make things busier! Still, I managed to meet both of my lovely sisters, go shopping (I got some AWESOME new boots. I walked around all day thinking how comfortable they were. In fact I was walking along, thinking how comfortable they where when I realised I should be in a lesson...), get a new prescription for my glasses (my new frames are so super cool....) AND I went to the gym. With Tom. And we benched. I got 99 problems, but a bench ain't one...
Anyway *still giggling to self* when I finally got home, Simon was in. So started the nightly "so what shall we eat?". I have to confess that at this point, I'd not eaten since breakfast (naughty, I know) and I was HANGRY. I was so HANGRY I wished that the person talking outside my window would "crawl up his own arse and die"....
After an hour of discussion, I finally exploded with the hunger and stomped to the kitchen stating "FINE, YOU KNOW WHAT? I'LL COOK". Simon, who up till this point had been very well behaved responded with "Ok, but I don't see why I should be punished".
It's like the man has no survival instinct at all.
He enjoyed the food in the end. Sod.
Anyway, this recipe is so quick, simple and easy even I didn't mess it up. And no husbands, cats or neighbours were hurt in the process.
Egg and cheese "scran"
I have a little Simon voice behind me telling me to call it Oeuf-Fromage Al A carte..... 0_o I don't feel it.
Anyway, not wanting to blowing my own whistle without being cheesy you could say it was "eggcellent" (too much?)
Fine.
So here it is...
You'll need:
2 x large eggs
150g cottage cheese
75g Quinoa
Salt and pepper to taste
Onions/peppers whatever else you want to put in to add some taste - I used about 10g onion
Optional: 50g cheddar cheese
Beat the eggs (I used a cup....), fold the cottage cheese in (yep, still in the cup for me) and then put it into an ovenproof dish (apparently the first one I selected was in fact NOT ovenproof) for around 30 minutes on 160 degrees C (or until it sets).
Pop the cheese on and give it enough time to melt (about 5 mins)
It serves TWO people (as made above) and the macros look a bit like this (per serving, so if you eat it all - double what you see :P) this is with 50g cheddar cheese:

29g carbs
26g fat
37g protein
High protein, nom-a-licious and full of goodness. The egg and quinoa texture works well together giving you some bite. I loved it!
